Here, the tables are set by the sea, and in a theatrically laid-out space with an open kitchen, Yiannis Baxevanis, one of the chefs who put the stamp of a profound, very expressive Greek identity, works little miracles with locally sourced materials. One such dish is the slow-cooked, super savory goat, with beans that get saturated with its taste, and a carrot and apple puree with cumin. Greek Cuisine Award 2018
