When it gets dark, the place next to the stylish hotel’s swimming pool is laid out as an atmospheric restaurant with few tables and views of the Caldera. Chef Stratos Haitaridis makes the most of the modern cooking techniques and an array of ingredients from Greece and abroad and offers an exuberant cuisine full of imagination, which has a Greek basis but also takes cues from the rest of the world and current trends.
