Executive Chef Nikos Thomas presents a menu that highlights local flavours, using vegetables from the garden of the compound, and, at the same time, setting his personal seal.
Try the chickpeas with beef marrow broth, crayfish tails, and the lamb shank with spiny chicory in an egg-lemon sauce.
