Emphasis on locally produced ingredients, in a menu that takes a creative look at the Greek tradition, at the same time winking at Italian flavors too. Dimitris Giginis turns the fresh round cheese of Andros into crispy croquettes, cleverly combines sardine fillets and takes a trip back in tradition with dishes such as pasta with sigathouro (a kind of traditional butter). He doesn’t say no to the fish of the day’s catch either. It is open from the morning in an utterly picturesque square, under trees and bears the stamp of the Aegean Cuisine network.
